 Nonna's Ice Sugar Donuts

These delicious, lemony cookies are known as anginetti, tarallucci, Italian lemon knot cookies or wedding cookies. My mom always just called them ciambellette (little donuts). 
As children, we loved them and we began to call them simply ice sugar donuts. They became a huge hit with the grandkids and for decades now we have been calling them "Nonna's ice sugar donuts." 
They are traditionally served at weddings and symbolize a big hug with a knot for "tying the knot". They were well sought after in our little community. My mother was often asked to make them for a wedding or special occasion.  They also made an appearance at special events and holidays and definitely on our Christmas table. 
My mom always had a batch in the freezer ready for afternoon coffee and visitors. 
When my children and I would make the long trek up North to visit them, there were always big freezer bags full ready for us to bring home. 
The family continues to grow and so does our love for these cookies and the amazing Nonna who started this tradition. They are adored by her children, grandchildren and great grandchildren. Her hands do not work like they used to and she does not make them anymore, but we will continue this tradition with the hope that our children and future children will honour Nonna by doing the same. 
 These ciambellete have a cake like middle and a lemon infused icing that gives them  a sweet and delicious taste. These cookies are great for gift giving and are a huge hit with big and small. I promise you this will be a "dolci" that you will make over and over!




Ingredients

💚4 cups all purpose flour
💚4 tsp baking powder
💚4 eggs
💚1/8 tsp salt
💚1 cup sugar
💚2/3 cup vegetable oil
💚1/4 cup milk
💚zest of 1 large lemon
💚juice of one lemon
💚1 tsp vanilla extract
💚sprinkles for decorating (optional)



Directions
💚Preheat oven to 350 degrees and line 2 cookies sheets  with parchment paper
💚Sift together flour, salt and baking powder and set aside
💚Using a whisk attachment whisk eggs until frothy - about 4 minutes
💚Add sugar and continue to whisk until a little thickened
💚Add lemon juice, oil, vanilla, milk and zest and combine it well (with a  spoon)
💚Stir in flour slowly until all combined. You will have a  nice soft dough.If too sticky, add a bit of flour at a time until you get a nice light and slightly sticky dough.
💚 Scoop about a tablespoon of dough and form a ball and then roll into your hands to form a log. Place log on floured  board  and roll until it is about 4 inches long.
💚Shape it into a circle with the 2 ends overlapping. Press down slightly so the ends do not come apart
💚Bake until bottoms are lightly golden. This takes about 15 minutes but check to make sure they don't burn
💚Let them cool on a wire rack

While donuts are baking, prepare the glaze and let it sit to thicken. 

for the glaze

💚2 cups of powdered sugar
💚1-2 tsp milk
💚juice of one lemon
💚Combine all the ingredients and stir until glaze is the consistency of your liking- they should not be too runny but not too thick either. 

💚Dip tops of donuts into glaze and return them to wire rack to dry
💚Place parchment paper under rack to catch any drippings.
💚You can sprinkle with Christmas sprinkles if you wish!
💚You can freeze them on a cookie sheet first and then place in a bag and they will stay fresh for a long time. But guaranteed they will get eaten fairly quickly.
