Salmon Oreganata
Another Christmas Eve fish suggestion or anytime you want a moist and flavourful salmon! Oreganata is a breadcrumb topping that is used frequently in Italian cooking to add flavour to baked dishes such as chicken, pork, veal, fish and seafood such as shrimp and clams! This versatile topping is quick to make with a few simple ingredients that most of us already have in our pantry and fridge. Once you try it, I promise you will want it on all sorts of meat! This recipe will provide you with the base for the oreganata and how I use it on salmon. The moisture from the toppings create a seal and give the salmon an incredible moist texture. As always, the amounts are just a guideline, please add more or less depending on your taste buds and what you feel it needs. Go with your instincts!
Ingredients
- salmon fillets ( individual or half salmon)
- 1 cup dried Italian seasoned breadcrumbs
- 1.5 cups chopped fresh parsley roughly chopped
- 1/2 cup grated parmigiano reggiano
- grated zest of one lemon
- 2 cloves garlic chopped finely
- 3-4 tbsp olive oil (QB)
- Freshly grounded kosher salt
- lemon wedges
Directions
- Preheat oven to 375
- In a medium bowl combine breadcrumbs, cheese, lemon zest. garlic, parsley and salt. Mix together, then slowly add olive oil and combine until you get a sand like crumbly consistency. Should be wet but not soaking wet. Taste test to see what you need more or less of.
- Pat salmon down with a paper towel and lightly season with salt, pepper and brush lightly with olive oil
- Place salmon on a parchment lined cookie sheet
- Cover salmon generously with the dressing and press down
- If you like a crunchier topping you can spray the breadcrumb mixture with oil (optional)
- Bake for 15-20 minutes until cooked. Time will also depend on how you like your salmon.
- You can broil for a minute or less before you remove from oven if you would like it crisper. Be careful not to burn
- Serve with lemon wedges for adding more brightness to the flavour
