 Sausage, Kale and White Bean Soup



This soup is a family favourite and I make it quite often throughout the winter. It is a healthy and hearty soup to help warm your insides and make you feel nice and toasty! It is typically made with cannellini beans, kale and sausage but I also like to add chick peas for an additional crunch texture and increased health benefits.  Paired with Italian spices, tomatoes, garlic, celery and onions this is sure to become a favourite in your house as well! 
As always with Italian recipes the suggested spice measurements are just estimates. You can omit if you don't like a particular spice. I always recommend starting with the suggested amount and then adjusting as you go along. This dish can have a bit of a kick with the chili flakes but how much you use depends on how spicy you want it and how potent your chili is! As always

Ingredients

  • 4 Italian garlic sausages
  • 4 celery stalks chopped 
  • 4 carrots chopped
  • 4 plum tomatoes quartered
  • 1 large onion diced
  • 2-3 garlic cloves 
  • 1 batch of kale- washed, trimmed and chopped
  • 2 cans of cannellini beans rinsed
  • 1 can chick peas rinsed
  • 8 cups of vegetable or chicken stock
  • 3 bay leaves
  • salt and pepper
  • 1/4 tsp peperoncino (QB)
  • 1 tsp thyme (QB)
  • 1 tsp Italian seasoning
  • small chunk of parmigiano rind

Directions

  1. In a large stockpot or dutch oven add enough olive oil to cover bottom
  2. Remove casings from sausages and add to pot. Break up with a wooden spoon into large chunks and cook until browned
  3. Add onions, carrots and celery and spices. Saute for a few minutes before adding garlic. Stir and let saute until onions are translucent
  4. Add beans and quartered tomatoes and continue to stir allowing tomatoes to cook down a bit
  5. Add stock, bay leaves and parmigiano rind and bring to a lively boil
  6. Reduce heat to a simmer, cover with lid and allow to simmer for a minimum 1 hour. 
  7. Taste test and adjust seasonings several times throughout the cooking process
  8. About 10 minutes before serving toss in the kale and allow to cook through
  9. Ladle into bowls and sprinkle with grated parmigiano and some peperoncino flakes
